Has anyone got any good beetroot recipes?

Have got a bunch from our organic box and I don't know what to do with it!

    Roasted Beetroot

    Ingredients

    4 beetroots

    A drizzle of vegetable oil

    Instructions

    1) Chop of the tops of the beetroot stalks, leaving about 5cm of stalk. Be careful not to bash the skins or cut the stalk off completely or they will leak red juice EVERYWHERE!

    2) Put them in a roasting tray and cook for about an hour until they are tender.

    3) You can serve them as they are for people to peel themselves, or leave to cool for a while and peel them before serving.

    Not sure how much I'll like the taste of beetroot on their own. Have you got any more beetroot recipes up your (red stained) sleeve please?

    Do you mean you've never had beetroot by itself from a jar or can? I think it's really nice, but some people may find it a bit vinegary.

    Baked sounds nice, but boiled keeps the nice natural flavour too.

    Try it sliced with a salad or on a burger - in Australia we love pineapple and  beetroot on hamburgers!

    SPICY BEETS AND CARROTS   500 g beetroot, cooked and peeled 500 g carrots, peeled 2 tablespoons grated fresh ginger 1/2 cup brown sugar 1/2 cup orange juice 1/4 cup cider vinegar Grated zest of 1 orange 1/2 teaspoon ground cinnamon 1/2 teaspoon mace Cut the beetroot and carrots into slices or chunks. Steam or boil the carrots in lightly salted water about 5 minutes or until tender but not soft. Drain. Combine the ginger, sugar, orange juice, vinegar, orange zest and spices in a saucepan and bring the mixture to a simmer. Cook until thickened. Simmer the cooked beets and carrots in this sauce for about 5 minutes before serving.   SPICY BEETROOT SOUP   1 lb firm raw beetroot, peeled and grated 1 medium potato, peeled and grated 2 carrots, peeled and grated 1 small onion 1.2 L vegetable stock Salt and Pepper A few drops of Tabasco sauce Put all of the vegetables into a large pan and add the stock and seasoning. Bring to the boil. Simmer gently for 20 minutes until the beetroot and carrots have softened. Add a few drops of Tabasco, taste and adjust the seasoning as required.   BEETROOT RISOTTO Serves 4 Around 1.5 l (about 2 pints) vegetable or chicken stock 3 tablespoons butter or olive oil 1 medium onion, diced 350 g (12 oz) Arborio (risotto) rice 120 ml white wine 2 tablespoons chopped fresh parsley, or 1 tablespoon dried 2 tablespoons chopped fresh basil, or 1 tablespoon dried 2 to 3 medium beetroots, peeled and grated 2 to 3 handfuls dark greens – like beet greens, kale, spinach or chard – finely chopped Salt and pepper to taste Grated peel and juice of 1 lemon 1 handful freshly grated Parmesan cheese, to serve Bring the stock to a simmer. Heat the butter in a separate wide pan over medium heat; add the onion, and sauté for 3 minutes. Add the rice, stir to coat well, cook for 1 minute. Add the wine and simmer until it’s absorbed, then stir in the parsley, basil, and the beets. Add 500ml stock, cover, and simmer until the stock is absorbed. Begin adding the ...

    Nils - I like pickled beetroot but I actually love most things pickled so I think it's more the pickle aspect I like than the unadulturated taste of beetroot!

    Thought I'd just join this community - sorry I'm not a vegan.

    I had a traumatic experience with beetroot as a child, and i dont know if i'm ready to talk about it. Ok here goes, its cathartic.

    We were on a caravan holiday, my mum asked me if i wanted some salad, i stuck my hand out to say know and knocked the beetroot jar everywhere!

    I disappeared in fear for a couple of hours hiding in the caravan park toilets, when i came back to the caravan, all the seats were sitting out on top of the vehicles and my little purple dog was to be seen running around!
