5aDay Box Veggie Cakes
Serves 4 (for smaller portions reduce accordingly)
- 450g UK potatoes, peeled and halved
- 2 medium carrots, halved longways
- 250g parsnips cut into chunks
- 250g Swede cut into chunks
- ½ a finely chopped onion
- 2 tablespoons of plain flour
- 1 lightly beaten egg
- Sunflower oil
- Salt and pepper
- Grated cheese
STEP ONE - Pre boil the potatoes with the carrot, parsnips and swede for 10 mins, drain and cool.
STEP TWO - Coarsely grate the pre-cooked vegetables into a bowl and stir in the finely chopped onion, flour, egg and seasoning to taste.
STEP THREE - Lightly oil a frying pan and cook the veggie cake mixture in small flat cakes and cook until crispy and golden on both sides. Flatten as they cook. Fry for about 3 or 4 minutes on both sides.
STEP FOUR- Top with grated or cottage cheese
